Old-Fashioned Chicken Stock

Making chicken stock at home is easy, but it needs a lot of focus to make it taste as good as you want. Buying a chicken stock from outside is not a good option instead, it could be ready easily at home. By making the chicken stock at home, you can get the taste you want. There will not be any pinch of more or less ingredient if you make it at your home. A positive point you get by making it at home is that you can easily freeze the chicken stock. The recipe of old-fashioned chicken stock provides the base to make any of the soup. So, once you learn how to make old-fashioned chicken stock, you can make any soup easily.   • Vegetables:
  • Unpeeled white onions, finely chopped – 2
  • Celery, cut in thirds – 2 stalks
  • Bay leaf -1
  • Black peppercorns – 8
  • Fresh flat-leaf parsley – 1
  • Fresh thyme sprigs- 6
  • Garlic cloves smashed and unpeeled 4
  • Carrots unpeeled, cut in thirds – 4
  • Chicken:
  • Organic chicken backs, necks, bones and wings – 6
  • Water:
  • Cold filtered water – 8 quarts


  • Take a large pot that can withstand 12-quart, add the chicken, garlic, peppercorns, onions, celery, carrots, thyme garlic, bay leaf and parsley and mix them all.
  • Turn on the flame, and medium flame, keep the large pot along with chicken and vegetables.

3) Now, add water and cover the large pot. Once the water starts boiling, reduce the flame to low heat. Once the flame is on low heat, the water bubbles start to break, forming a scum.

4) Remove the layer of the scum and the fats that come on the top of the pot. Now boil one partial flame for about 3 hours. If the water level is reduced, add more water gradually.

5) Drain the stock via a fine mesh colander and an unbleached cloth. Drain the stock in a heat-resistant bowl.

6) Allow the chicken stock to come at room temperature. Cover the stock and then refrigerate it within 4 hours.

The recipe provided is for 12-quart pots; for the small-sized pots, use half of each ingredient. The stock can be refrigerated for up to 3 months. You can store an upright quantity of the chicken stock in an easy-to-handle container, and you can take each bowl of soup as per your requirement.
