If you are fond of caffeine but are not satisfied with the coffee from the major brands on the market, there is a simple alternative that can brighten your days in these pandemic times. There are, in the city, several specialty coffee shops and roasters that treat coffee at home beans with due responsibility and delicacy. After we told you how to take the first steps in the art of bread, this time we went to talk to experts and baristas who shared with us the art of making a coffee, its techniques, and different recipes. There are traditional methods for making coffee at home, like the Italian coffee maker or the French Press, or more complex ones like the Aeropress and Siphon, which need specialized equipment. Venture out and test your barista skills in the comfort of home.

FRENCH PRESS

The French press is very easy to use!

It is a method where the coffee is immersed in water for a few minutes and the drink is fuller and very tasty, leaving a very fine powder at the end of the cup, as it does not use a paper filter.

To make a coffee in the  French press, you need ground coffee(in a coarse grind ) and hot water (between 80ºC and 90ºC). You do not need a paper filter, as the press plunger has a fine screen that separates dust from water.

The proportion of coffee and water can be 6 g to 100 ml. First, you put the thickest ground coffee at home in the press, then you add the hot water, mix and let it steep for 4 minutes. Then lower the plunger and pour the coffee!

In this preparation, the coffee oils pass into the drink, so it has more body and a unique flavor.

HARIO V60

When the Japanese method  Hario V60  arrived in Brazil, a few years ago, at first sight, many people mistook it for a traditional filter holder. However, this preparation for strained coffee showed why it is so valuable.

BUT WHY IS SO SPECIAL?

The main reasons are that the filter holder has spiral lines (or veins) in its internal part, which provide the expansion of the coffee powder at the moment the drink is strained. And a large opening at the base of the strainer allows the speed to be controlled.

The preparation is very simple. First place the Hario paper filter in the holder; scalding the filter with hot water (which should be between 92 ° C and 96 ° C, if you can’t measure the temperature, just boil the water and let it sit for 1 minute); place ground coffee at home (medium-fine grind); moisten the coffee first, and you can pour the water in a circular motion until you finish filtering.

BALANCE

No matter which recipe you use (and I recommend you use one recipe – you will find several online), this will require you to measure both the coffee and the water you will use to prepare the drink.

There are two ways to do this: by volume or by weight. The weight will be more accurate and consistent. You will notice that it is the option most used by specialty coffee shops. I recommend it too, as this option will help you always have a cup of perfect flavor.

Ideally, you want a pair of scales with an accuracy of at least 0.1g. They can range from basic to high-tech (and they are usually priced in proportion to your profile).

CLEVER DRIPPER

How about using a method that uses immersion like the French press, but also filters coffee like Hario?

The name may be difficult, but the “ coffee dripper ”, free translation by  Clever Coffee Dripper, is a method of preparation that is making the minds of many people here in Brazil. Its shape resembles the traditional Melitta, but its material is quite different: it can be made with medical-grade plastic or ceramic.

Unlike all filter holders,  Clever Dripper works with the principles of total immersion to extract coffee. What does that mean?

Instead of the water flowing down the filter without obstacles, the coffee powder is immersed in the hot water for two minutes or more, and only then is it filtered.

After pouring hot water into the conical cafeteria, a weight-controlled valve system releases the coffee when the filter holder is placed in the cup. In other words, nothing to push the plunger as it happens when we prepare coffee in the French Press. Not even pouring water little by little like strained coffee.

DO YOU NEED EXTRA EQUIPMENT?

Once you have entered this world of coffee you will want different filters and methods and kettles, among other things!

TIPS FOR PERFECTING YOUR COFFEE

Now that you have decided which method to use and which extra equipment to buy, you can start your experiments by changing the variables and comparing the results in the cup.

For example, it is legal to vary the coffee grind, the amount of coffee in relation to the water, among others.

And a very important tip, buy quality coffee, it will make all the difference!
