For the coating :

  • All-purpose flour – three cups
  • Cornstarch – four tablespoons
  • Baking powder – one teaspoon
  • Salt – one teaspoon
  • Garlic powder – one teaspoon
  • Black pepper powder – one teaspoon
  • Red chilli powder – one teaspoon

For the marination

  • Take 1 kg skinned chicken and make cuts on them so they marinate properly.
  • Take one cup of water and add one tablespoon of vinegar, one teaspoon of black pepper powder, one teaspoon of cumin powder, one teaspoon of garlic paste, one teaspoon of ginger paste, salt as you desire, and quarter cup of hot sauce.
  • Mix it properly and add to the chicken.
  • Put the marinated chicken in a plastic bag and keep it overnight in the fridge.
  • Take a deep frying pan and oil to it.
  • Put it on medium flame.

For the buttermilk:

  • Take half a cup of yoghurt and whisk it.
  • Add half a cup of water to have a thin consistency.
  • Buttermilk is ready.
  • Take a large flat bowl and add three cups of all-purpose flour to it
  • Add four tablespoons of cornstarch to it.
  • Add one teaspoon of baking powder, salt as you desire, one teaspoon of garlic powder, one teaspoon of black pepper powder, and one teaspoon of red chilli powder.
  • Mix it properly.

For the coating and frying:

  • Take the pieces of the marinated chicken and add them to the buttermilk.
  • You can keep the chicken in the buttermilk for three to four hours if you want the chicken to be moist from inside.
  • Take one piece of the chicken and hold it above the bowl so the excess liquid drips, then add to the all-purpose flour mixture and coat properly.
  • Repeat with all the chicken pieces.
  • Take a wooden skewer and put in the oil, if there is a bubble rising against it, the oil is warm enough to fry the chicken. If not then wait for a few more minutes.
  • Add the chicken piece to the frying pan and cook for five minutes.
  • Once the chicken is golden brown on the lower side let it cook on the other side.
  • After the chicken has fried put it on a plate with tissue paper so it absorbs the excess oil.
  • Your crispy fried organic chicken is ready!
  • You can also make finger chips to serve with it.
